Turn Your Gas Grill Into A Pizza Oven

One big challenge we all face with gas powered grills is the heat distribution.  Sure, they can get plenty hot enough, but the top heat tends to escape.  Why? Unfortunately, the lids are typically made of sheet metal or very thin gauge stainless steel.  Both do a great job making your grill look sharp, but capturing the heat is not their strong suit.  So, when grilling pizza, the bottom of the crust typically burns before the cheese on top, starts to melt.  That's bad news for your Saturday afternoon cookout! 

We tinkered around with this issue a bit last year and decided to cook our pizza like a flat bread.  Toss down the dough, cook one side, flip and repeat, then add your toppings.  This method definitely works and it's actually quite good, but it didn't satisfy us in the way that a truly grilled pizza would.  

So, if you want to make authentic, delicious grilled pizza, Fresh Chef and I, came up with a new solution and we like it.  We like it a lot!!  We are going to help you turn that propane grill into a backyard pizza machine!  You will need a gas grill, a Baking Steel, and about 6 fire bricks (packages of 6 sold at Home Depot for less than $30).  We've outlined our process in the video and made it "oh so easy" to follow along.  This summer, when your guests are clambering for grilled pizza, don't sweat it!  Grab your Baking Steel and your bricks, you'll be good to go.  Happy Grilling!

Make Shift Gas Grill Pizza Oven

Here's the deal.

  1. Place 6 bricks in a "U" shape on your grill. Fire bricks work great... (red mason bricks may not be safe).   Safety first....

  2. Place ANY of your Baking Steels* or Griddles* on top of the bricks and turn Grill on High for 40-45 minutes. (Don't have one? Get one here!)

  3. Right before launching pizza, turn grill burners to low.

  4. Launch Pizza directly on top of grill grates, under the Steel. Close lid and cook for 4 minutes.

  5. Remove pizza and devour.

  6. Repeat until you can't eat anymore.

Still confused? Here's what's happening. The Baking Steel is absorbing so much heat, like it does in a normal oven, but on your grill. Same thing. What we are doing instead is letting the heat reflect back down on top of the pizza to cook the top while the grill burners/grates cooks the bottom of the crust. What do you get? Pure grilled pizza bliss!
