Chicken Parmesan over Pasta - The only recipe you need
2 ea Boneless, skinless chicken thighs
2 oz flour
2 ea eggs, beaten
2 oz Italian bread crumbs
6 oz tomato sauce
4 oz low moisture mozzarella
4-6 oz angel hair pasta (or any pasta really)
basil (for garnish)
8 oz oil for frying
Set up breading procedure. 1 bowl of flour, 1 bowl of beaten eggs, 1 bowl of bread crumbs.
Keeping one hand dry and one hand wet, bread the chicken first in flour, than into the egg and then into the bread crumbs.
Pre-heat your Baking Steel Carbon Steel Pan with oil in it on medium until oil is 300-325 degrees.
Carefully place chicken into pan and get it a little shake to keep it from sticking on bottom. Flip after brown on one side (2-3 minutes). Cook for additional 2 minutes and turn off heat.
