Hands down the best carbon steel. Easy to season, great and fun to cook with it.
It can be used on any surface, gas, grill, and flatop. Given it's 3mm thickness, I don't see any induction burner warping it.

Great pan. Good weight. Eggs do not stick once seasoned. Seasoning was simple but I needed to spend the time to make it happen. Hot water from the tea kettle and scrub with a brush to remove the wax. Drying it out in the oven followed by cooking bacon and wiping the pan with a paper towel to coat the surface. Let it cool and it's been easy to use ever since. I'm not washing it at all.

Only used once. Family health issues. It worked as described and I sent one as a gift. Have not heard from the gift. My seasoned as advertised and cooked great for the first time. I usually use cast iron but want to use this more right now. I like the style and feel, but only using it once at this point, I can be more descriptive. I am guessing I will love it and buy the larger one also.

This pan is non stick with a little oil. It takes high heat and low heat well. I love being able to brown on the stove top and finish in the oven. Does great with making sauces. My only complaint is that they don’t make an 8 inch model or i would get that as well.

This is my first carbon steel pan. Fit and finish are really nice and it replaced another top brand that I returned after finding out they are not convex to avoid spinning on induction. I was happy to find a pan made by De Buyer that has the convex bottom, without the epoxy handle coating De Buyer comes with. I can throw this in the oven or grill with less concern over the temp. It took a couple of attempts but have a nice seasoning with very thin layers of grapeseed oil (buffed nearly dry) and 30 minutes in the oven at 450.

This is an awesome 10-inch pan! It seasons well and cooks stick free from day one. Cleanup is a breeze. I can use metal utensils in it, unlike the coated pans. It is as good as my 12-inch pan. I can use my carbon steel pans on an electric stove, a gas stove, a wood stove, or over the campfire. Hands down the best you can buy!

The 12 inch pan is big and one handed heavy. I am quickly getting used to the weight and don't notice it as much as when I first picked it up. I like the long handle and that it is well attached. It will never come loose, break, or fall off. It is also big enough for two hands if needed. I wish it had a small loop handle opposite the long handle or one was offered as a DIY add-on. I used to use cast iron, but am currently using stainless and porcelain pans (stove issues), so I am learning to adjust to the needed time for preheat and the correct cooking heat. I like the pan already and know I will like it more as I get to use it more. When I can afford it, I will get the 10 inch pan as well. They will both be great tools in my kitchen for many years.
If you are hedging about buying one, spend your money on this kind of a durable pan. It is far better than a big box store nonstick junk pan that will not hold up.

If you have been looking for a carbon steel pan this is an excellent economical option. The way it seared meat was AMAZING. Still new so needs some more love with the seasoning and I wish the bottom part was a little wider so I could fit more meat on it but overall a very solid pan that will last for years.

These pans are built like tanks! They are thick carbon steel and the handles are securely riveted to the body. I need to season them, but once that is done, these pans will last forever. I am really looking forward to using them.

The pan was a great price, and arrived really fast. It was a snap to season and my first use was on seared scallops, where it did great, really held the heat and no sticking. I did as instructed with the seasoning process. Since then I’ve done chicken breasts, a clam sauce with linguini. Also a gnocchi sautéed with butter olive oil & anchovies. Excellent pan!

It's quite a good pan, but a little heavier than I anticipated.
I didn't find your instructions for completing the seasoning to be quite adequate. After each use I clean and dry it carefully, then do the following: put a tiny bit of oil on a paper towel, spread the oil in a very thin layer over all of the pan, wipe off as much oil as possible, bake the pan at the highest available temperature (that's 482 in my Anova) for at least 30 min.
I've now done this a dozen times or so. The resulting finish is getting really good.

It was much easier for me to season than a cast iron pan, and it seems to heat up faster. I am extremely pleased with the cooking results I have gotten with thin cuts of meat like pork chops and pork shoulder steak. With this pan I was able to thoroughly cook the cuts while still able to sear in the juices. Same with catfish fillets. For all the cuts I have cooked so far, I have not cooked above medium stove top heat. I would recommend this pan to anyone.

Just bought the #12 pan. Arrived in perfect condition. The picture is after 2 rounds of oven seasoning and one stovetop seasoning. Cooked twice in the pan, onions, mushrooms and peppers for a stir fry and the pan worked well as would be expected. This morning , a bold move, an omelet. Use less than a Tbs of butter and did use room temp eggs. The bits in the pan are not anything that was stuck, just scraps that fell off into the pan after serving the 2 pieces. Slid around so much i had a hard time folding the omelet because it kept running away from my spatula. If you are looking for a great pan at a great price this is it. That said you do need to learn how to use this tool, there is a learning curve, patience and you will be rewarded.

My fault I didn’t pay attention, but I was disappointed to see that the 12” doesn’t refer to the cooking surface. So, it’s not much bigger than my existing cast iron skillet. That said, with the side edge expanding it a bit it does hold a bit more and I still love it. Hopefully, you’ll add a 14” one soon!

If you have an electric range or induction cooktop, please PAY ATTENTION!
You need a carbon steel pan that can stay in a 450°F oven for more than 1 hour. Stovetop seasoning does not work well with electric cooktops. Your oven, however, works very well.
De Buyer makes great pans that are built like tanks and don't warp (at least in my experience). You will have to buy their more expensive Pro line with stainless steel handles to achieve this. I bought the 10-inch Baking Steel made by De Buyer and I love it so much. The Baking Steel carbon steel fry pan is so responsive. It heats up and cools much faster than cast iron. Think your pan is getting a bit hot? Just remove from the heat for a few seconds and you're right as rain. If I turn down the heat on my electric range there is a noticeable delay cooling down. If I'm using cast iron it still takes too long for it to cool down. I wish I'd gone carbon steel years ago. The picture shows my 10-inch Baking Steel fry pan after cleanup from its bacon and eggs morning chores. The eggs were all slippy-slidey in the pan (for those of you who want to know).

This is my third piece of baking steel cookware. We started with the pizza steel, and the way that performed blew us away. I then bought a 12” pan for my wife, and it’s is unbelievable. Her chicken cutlets have never been this crispy. We love these products so much that we started buying them as gifts for our large (and growing) Italian family. I'm still new to the carbon steel pan and when I received it, unfortunately it had some rust spots on it but after cleaning it with mild soap, that disappeared. I'm not an expert on this pan and it takes a little more finesse since I'm used to non-stick pans. I've used it several times now and it gets easier and better with each use. Perhaps after I've had it for a couple of months, I'll come and review. It's really heavy for me so that is an issue but it's great quality so that is a plus.
