LAMB SKEWERS WITH LEMON, OLIVE OIL & SUMAC SALT
- 1lb lamb- either sirloin, shoulder or leg, cut into small cubes
- ¼ cup lemon juice
- 1 tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup olive oil
- Wooden skewers
- 2 tsp sumac
- 2 salt
- 1 tsp freshly ground coriander
- Big pinch of ground cumin
In a bowl, whisk together the lemon juice, oregano, salt and pepper. While still whisking, slowly add the olive oil in a steady stream. Take 1/4 cup of the lemon dressing & marinade the lamb cubes for at least 30-60 minutes. Set the remaining dressing aside to pour onto your skewers after they are grilled.
Preheat your Baking Steel Griddle- on a grill/ fire/ stove top.
Mix together all the sumac salt ingredients.
Thread your lamb cubes onto the skewers- around 5-6 pieces per skewer. Grill the skewers on each of the four sides for around 3 mins per side. While they are cooking sprinkle with sumac salt. Place the cooked skewers in a bowl, whisk the remaining lemon oil dressing to combine, and drizzle over the skewers.
