Basic Baking Steel Pancakes

A simple, basic, yet delicious pancake recipe that even the kids can make!

Ingredients

2 cups All Purpose or Gluten Free 1to1 Flour

1 c milk (almond, cow, oat, etc.)

1/2 tsp baking soda

1 1/2 tsp baking powder

1 Tbsp brown sugar

1 tsp vanilla extract
-
2 ea eggs (yolks and white separated)

2 Tbsp butter (for greasing your Griddle)
Directions
Mix the batter
Combine all dry ingredients into one bowl
Mix egg yolks, milk and vanilla extract together.
Combine dry and wet bowl and mix well.
In separate bowl with a whisk or immersion blender attachment, whisk egg whites until stiff peaks are formed.
Fold egg whites into pancake batter until incorporated.
Cooking your Pancakes
Pre-heat Baking Steel Skinny Griddle on medium for 5-6 minutes.
Take butter with paper towel and rub all over Griddle, almost wiping it off into a nice shiny layer. (*this is also a great time to check temperature with the butter. If smoking and browning too quick, turn the heat down and give it a minute or two to even out.)
With ice cream scoop, spoon, ladle, etc. plop down pancake batter into as big or small of pancakes as you like.
When they start to bubble on the top, give them a quick flip and cook for about half the time they did on the first side. (1-2 minutes top total cooking time.)
Repeat with any remaining batter. Serve with butter, syrup and whatever else sounds good. Maybe that cup of coffee!
