This Chicken Parmesan is fried up in our Carbon Steel no.10 pan, smothered in our house pizza sauce and topped with mozzarella cheese. All served on top of our favorite pasta, angel hair. Comfort food in minutes at home. The flavor of this dish reminded me of a pizza we made in the test kitchen before, our Eggplant Parm Pizza.

Ingredients

2 ea Boneless, skinless chicken thighs
2 oz flour
2 ea eggs, beaten
2 oz Italian bread crumbs
6 oz tomato sauce
4 oz low moisture mozzarella
4-6 oz angel hair pasta (or any pasta really)
basil (for garnish)
8 oz oil for frying

Directions

Set up breading procedure. 1 bowl of flour, 1 bowl of beaten eggs, 1 bowl of bread crumbs.
Keeping one hand dry and one hand wet, bread the chicken first in flour, than into the egg and then into the bread crumbs.
Pre-heat your Baking Steel Carbon Steel Pan with oil in it on medium until oil is 300-325 degrees.
Carefully place chicken into pan and get it a little shake to keep it from sticking on bottom. Flip after brown on one side (2-3 minutes). Cook for additional 2 minutes and turn off heat.
