The Mini is built the same way, same machined surface, same grease channel, same finishing process, in a single-burner footprint.
Six steps. One piece of steel.
The Mini isn't stamped or cast. It's machined. Here's what goes into making one:
1. Laser cut. Solid USA-sourced carbon steel, laser-cut to spec at 3/8" thick — 50% thicker than our Original Baking Steel, for more heat held and more heat delivered.
2. Mill the channel. A grease channel is milled into the griddle side, 1/4" deep, wrapping the entire inner perimeter. It catches fat. It defines the cooking surface. It's the detail Kenji noticed.
3. Shot blast. Both sides are shot-blasted — the baking side gets its texture; the griddle side is prepared for finishing.
4. Machine-smooth the griddle. The step nobody else does. We run the griddle side through a precision machine that removes a micro-layer of steel, leaving a surface almost like glass. That's what makes eggs slide.
5. Season. Hand-seasoned with organic flaxseed oil. Ready to cook out of the box.
6. Inspect. Box. Ship. Made in Hanover, Massachusetts. Inspected by hand. Lifetime warranty.
Pizza one side. Griddle the other.

I'm a steel guy.
I built Baking Steel in 2012 from a piece of carbon steel I pulled off a pallet in my dad's shop in Massachusetts. Fourteen years later, we're still making every steel in the same family shop.
The Mini Griddle is the most finished, machined product in our lineup, the version of the steel where every step matters. I'd put it up against any cooking surface in any home in America.
My wife makes pancakes on ours every weekend. I watch and drink coffee.

Common Questions
How do I clean it? After it cools, wipe it down or scrape with a bench scraper. For stuck-on food or to maintain the polished griddle side, use our Cleaning Bricks — they're built for exactly this surface and keep it smooth over years of use.
How do I season it? It comes pre-seasoned with organic flaxseed oil and ready to cook. The griddle side also builds seasoning naturally every time you cook on it. To re-season once a year or so, rub a thin coat of flaxseed or vegetable oil on the surface and bake at 500°F for one hour.
Will eggs really not stick? Yes — once you're a few cooks in. The machined-smooth surface plus natural seasoning makes the griddle side as non-stick as a well-seasoned cast iron, without any chemical coatings.
Does it work on induction? Yes. Carbon steel is fully induction-compatible.
Can I leave it in the oven? Yes. It acts as a heat stabilizer for everything else you bake. Just take it out when you need the rack space.

For any item that is found defective, you have a 30-day period (from when the order was shipped) to contact us for a replacement. This return policy applies to any item that is found to be defective in material or workmanship when put to normal household use and cared for according to instructions.
As for refunds, you have 30-days from when the order was shipped to receive a full refund on eligible merchandise. Merchandise must be unused, in the condition it was received and in the original packaging. Custom size Baking Steels are not eligible for returns/refunds. If your return falls within 30 days from when the order was shipped, we will provide you with a prepaid label for return shipping.

Please note: Minor imperfections, surface markings and slight color variations are normal result of our hand seasoning process and will not effect the performance of your Baking Steel. For the Baking Steel patinas, these surface blemishes, imperfections will become unnoticeable as the product seasons with use.

I’d like to mention to all the Ninja Outdoor Oven owners: The OE Stone that the ninja comes with is flawed. The main flaw is that they rapidly lose heat. They are also fragile & stain terribly. The Baking Steel “Mini Griddle”
Fits perfectly!!!! It’s A way to upgrade your Ninja tremendously! My steel gets up to 780F now. I can literally do 10 pizzas or more, rapid fire & just not lose heat! The pizzas come out SUPER CRISP & both top & bottoms are perfect. I’m working on a way to use TWO “Mini Griddles” cook two pizzas @ once!

Awesome griddle! It lives on my stove now. Makes amazing pancakes and tortillas. I have a crappy electric coil stove but this griddle is so thick that once it's hot, it states hot and heats evenly. Worth every penny!
I use a small oven (delonghi midi) which can accommodate a steel ~29x29 cm max. I was so glad that I found this. It seemed a bit pricey compared to my current baking stone, but then it is well worth it - I don't need to worry about it breaking, and can wash it however I like. The result is very noticeable when I bake pizza!
Nowadays I use it to bake sourdough. I would recommend this to everyone. Baking Steel's customer service is great and responses very quickly.
In the short time I've had the baking steel I've hosted a pizza party where I was able to churn out a pizza per guest in about 4 minutes of cooking for white dough and 6 for wheat. While it was cooking I was adding the toppings to the next pizza.
It's also been a great griddle, I've made chicken kebabs and smash burgers on it. Cleaning it is pretty easy, and I just leave it on the oven rack to store it. The only complaint I have is that it can be difficult to get my fingers under it to pick it up off the stovetop and I worry about sliding it and damaging the glass surface.
I have been using my new Mini Griddle since I received it. I have made the Legendary English muffins, which turned out great. I have grilled steak, hamburgers, and smash burgers. This baby is a lot of fun to cook on and easy to clean up and move.

The mini-griddle fits perfectly inside my Cuisinart pizza oven. The pizza oven came with a stone, but it was harder to achieve the bottom char. The griddle delivers a great crust for both thin and pan (Detroit) pizza!
I'm also anxious to use it as a griddle on the stovetop!

Goood piece of steel. Not overly heavy.I use it on my glass top electric stove. Conducts heat very well. This will not replace a frying pan but great for grilled cheese, pancakes & eggs. I have the pizza steel in my oven and plan on getting the steel for my Kamari Joe grill. Great product.
The AMAZING Baking Steel is a total game changer. I have a Ninja Outdoor Oven, & it starts to lose heat after the second or third pizza. With The Baking Steel, I can now cook 15 pizzas back to back & never lose a degree of heat! It’s incredible. Plus, I get a perfect crisp ! If I want to, a super leopard spotted char. Unfortunately I have an induction stove and I cannot get the heat on the griddle past 260F. Obviously I'm disappointed, the product won't work as I hoped. I didn't consider the safety systems in place on the stove when I envisioned the griddle on it. I knew it would technically work on induction because it's magnetic steel but... not to the temps I had anticipated.
Thanks for sharing your experience. Some induction cooktops have built-in safety sensors that limit surface temperature (often around 260–300°F) to protect the glass, and because our griddle holds and radiates heat so efficiently, those sensors can sometimes trigger earlier than expected.
One workaround is using an induction interface disk (also called a converter plate), which sits between the burner and the griddle to help heat more gradually and prevent the safety shut-off. These are widely available online and in kitchen stores. You can also get excellent results using the griddle in your oven or on an outdoor heat source if higher temperatures are the goal.

Perfect over the large front left burner of my glass top electric range.
I bought the Mini Griddle because it is the only one that fits my countertop mini oven. I am still learning how to use it. Preheat takes longer, I am told an hour, and I am learning patience. My lifestyle doesn't always have that kind of spare time. My wire rack was 15 minutes for the preheat and pizza bake. The pizza crusts come out different on the griddle than a wire rack, not bad, just different. If I ever get to an hour preheat, I will know how it really works. For now, it works just fine for me. I will explore using it on the outdoor grill when I have time. I think it will be a great addition once I learn how to use it.
We got this for our countertop convection oven. Fits perfectly and will let us bake proper bread while traveling in our RV. Love it!

I own 2 full size griddles, use them for pizza and bread in our kitchen oven. Wanted the mini griddle to finish partially baked personal size pizza in my instant pot Omni air fryer oven. Finishing works great and I tried a complete cook; took about 10 minutes, but it did produce nice char and puffy. Airy edges. Everything I’ve ordered from Baking Steel has met my expectations, and I continue to appreciate your videos, tutorials, and suggestions after the sale has been made.

This small Baking Steel is Great! It fits perfectly in our small Breville oven. When heated for about 30 minutes at maximum temperature before starting to cook it produces a perfect pizza in a very short time. We just bought it so haven't had a chance to try anything else yet.
I don't find the griddle function very useful since it's so small, but it's great for baking pizza in my Cuisinart convection toaster oven. Worth it for that use, though I'd appreciate a lower cost option that's just the baking steel.

This is my second purchase (I already own the larger pizza steel). The size of this is perfect for searing steaks on the stove top, but also fits inside most toaster ovens and grills.
