I lived through this for years.
If my stone wasn't cracking, it was smelling. Rancid, sour, sometimes weirdly like fish, and I never once cooked fish on it. You open the oven to preheat and there it is, filling the kitchen. Something died in there.
I tried everything. Scrubbing, baking soda, letting it sit. Nothing worked. Once I ran a stone through the oven's self-cleaning cycle out of desperation and it cracked in half.
Fifteen years since I've used one. Here's what's actually going on.
The stone is drinking
A pizza stone is porous. That's not a defect, it's the whole design, the pores are supposed to pull moisture out of the dough and give you a crisper bottom.
The problem is they don't discriminate.
Every drop of olive oil, every bit of cheese that slides off the edge, every trace of grease from a pepperoni, it doesn't sit on top of the stone. It soaks in. Down into the material, past anything a brush or a scraper can reach.
And it stays there.
Then it goes rancid
Fats oxidize. It's a slow chemical reaction with oxygen that breaks the fat down into smaller compounds, aldehydes, ketones, free fatty acids, and those compounds are what your nose is picking up.
This is the same process that makes old cooking oil smell wrong, or a bag of nuts go off in the pantry. It's not spoilage in the bacterial sense. It's the fat itself coming apart.
Heat accelerates it. So does oxygen, and a porous stone sitting in a warm oven has plenty of both.
The fish smell isn't your imagination, by the way. Certain oxidation products, particularly from polyunsaturated fats, produce compounds that read as distinctly fishy. Your nose is unusually sensitive to them. It's a real signal, not a trick of memory.
And every preheat makes it worse
Here's the cycle that traps you.
You preheat to 500°F. The absorbed oils get hot enough to smoke and off-gas, which is the smell filling your kitchen. Some of it burns off. Most of it carbonizes deeper into the pores.
Then you make a pizza, and a little more oil goes in.
Next bake, repeat. The stone accumulates and never resets. Two years in, you're not cooking on a stone anymore. You're cooking on a sponge full of burnt fat.
Why you can't clean it out
This is the part that makes people crazy, and it's worth understanding clearly.
You can't use soap. A porous stone will absorb the soap the same way it absorbed the oil, and then you'll taste it in your crust. Every manufacturer tells you this and they're right.
Scrubbing only reaches the surface. The oil is in the material, not on it. A brush gets you the top layer and nothing else.
Water is risky. A stone that's soaked up moisture and then hits 500°F can fracture from the steam trying to escape.
And the self-clean cycle will probably break it. I know this personally. Self-clean runs around 900°F, far past what most stones can take, and the thermal shock does exactly what you'd expect. Mine cracked in half.
What actually helps, and what's just coping
A long high-heat burn-off, an hour at 500 to 550°F, ideally on a grill or outdoors, does help. It carbonizes some of the residue and knocks back the worst of the smell.
That's the honest ceiling. It's management, not a fix. The oil that's soaked deep into the material isn't coming out, and you'll be doing this again in a few months.
Everything else you'll read online is coping dressed up as a solution.
The material is the problem
Nothing above is a cleaning failure. It's what happens when you cook fatty food on something porous, over and over, at high heat.
Change the material and the problem disappears.
Steel isn't porous. There's nowhere for the oil to go. Whatever lands on the surface stays on the surface, and it wipes off with a towel or scrapes off with a bench knife. Nothing soaks in, so nothing goes rancid, so nothing greets you when you open the oven.
The seasoning layer on a steel is a feature, not contamination, it's a polymerized, bonded surface, the same thing that makes a good cast iron pan work. It builds and improves rather than accumulating.
There's a bonus, too. Steel conducts heat roughly eighteen times better than ceramic, which means better browning and a real crust. But honestly, the first thing most people notice when they switch is that their kitchen stopped smelling.
