What Actually Happens When Dough Hits Heat

There's a moment in every bake that almost nobody talks about.

You launch the pizza. For about ninety seconds, something extraordinary happens on that surface, and then it's over. The crust is set. Whatever was going to happen has happened.

I've watched it maybe ten thousand times. Here's what's going on.

First, the surface loses heat

Your oven is 500°F. Your steel is 500°F. It can't be hotter than the oven, no matter how long you preheat.

The moment room-temperature dough lands on it, that surface temperature drops. Immediately. Both steel and stone do this, and there's no avoiding it.

The difference is what happens next.

Steel conducts heat about eighteen times better than ceramic. So while a stone sits there holding its heat, struggling to hand it over, the steel is pushing energy into your dough fast and pulling more from the oven to replace it. A stone has the heat. A steel gives it to you.

That's not a small distinction. It's the whole thing.

Then the dough starts to move

Watch closely and you'll see it lift.

Three things are happening at once, and they happen fast:

Water turns to steam. Dough is roughly 60 to 70 percent water. At the contact surface, that water flashes to vapor almost instantly, and steam expands about 1,600 times its liquid volume. That's the biggest force at work.

Trapped gas expands. All those bubbles your dough built during fermentation are full of carbon dioxide. Heat makes gas expand. Every pocket in that crumb pushes outward at once.

The yeast gets one last burst. Before it dies off around 140°F, it goes into overdrive. A final push.

The result is oven spring, and on a hot steel you can watch it happen with your eyes.

Why the rim rises and the middle doesn't

Here's the part I love, and I've never seen anyone explain it.

Your pizza is not uniform. The center is covered in sauce and cheese, which are heavy and wet. That weight holds the dough down and the moisture slows it. The center stays relatively flat, which is exactly what you want.

The rim has nothing on it.

So all that expansion has somewhere to go. The cornicione lifts off the steel, rounds out, and puffs. That's not decoration and it's not luck. That's the physics of an unweighted edge doing what the weighted center can't.

If your rim doesn't rise, the dough either didn't have enough gas in it or the surface wasn't hot enough to drive the steam. Usually the second.

Then it stops

Around 160 to 180°F, the proteins in the dough set and the starches gelatinize. The structure locks in place.

Rising is done. Whatever shape you got, you've got.

This is why the window is so short and why surface heat matters so much. You don't get a second chance at oven spring. Either the dough lifted in those first ninety seconds or it didn't.

Everything after that is browning.

If you want more lift

Preheat your steel for a full hour on a rack near the top, about seven inches from the broiler.

Then, a minute or two before you launch, switch the oven to broil.

That drives the steel surface past your oven's rated temperature. On an electric oven you might get to 550 or 600. Gas broilers can go higher.

More surface heat means more steam, faster, which means more lift.

A warning about that

Be careful.

If the steel gets much above 600°F, you will burn the bottom of your pizza on contact. Not brown it. Burn it. And because the surface is so hot, that burnt dough welds itself to the steel and is genuinely miserable to clean off.

Every oven's broiler is different. An infrared thermometer takes the guessing out of it. Without one, start conservative and work up.

What to watch for

Next time you launch, don't walk away.

Stay at the oven door for the first minute. Watch the edge. You'll see the moment the rim starts to lift, and once you've seen it, you'll know immediately whether a bake is going well or not.

It's the best ninety seconds in pizza.
