Sometimes called a “freeform pie” or a “rustic slab,” this galette is all about simplicity: a buttery dough, juicy blueberries, and a golden crisp crust baked directly on the Baking Steel.

Rustic Blueberry Galette (Slab-Style) Baked on a Steel
In a bowl or food processor, combine the flour, sugar, and salt. Add cold butter and mix until the dough has a crumbly texture with pea-sized bits of butter throughout. Slowly add ice water and the apple cider vinegar — just until the dough comes together. Flatten into a disc, wrap, and chill for at least 30 minutes.
Place your Baking Steel on the middle rack and preheat your oven to 425°F for at least 45 minutes.
In a bowl, toss the blueberries with sugar, cornstarch, lemon zest, vanilla, and salt. Set aside.
Roll out the chilled dough on parchment paper into a 14" oval or circle. Spoon the blueberry mixture into the center, leaving a 2" border. Fold the edges over the filling, pleating as needed. Brush the crust with egg wash and sprinkle with turbinado sugar.
Slide the parchment directly onto your preheated Baking Steel. Bake for 30–35 minutes, or until the crust is deeply golden and the berries are bubbling.
Let it rest for 15–20 minutes before slicing. Serve warm, optionally with whipped cream or a scoop of vanilla ice cream.
