Kicking off this week’s Pizza Friday Spotlight, we have @DrSous, who took our 72-hour dough recipe to the next level with a 96-hour ferment using King Arthur bread flour. His pizza features a simple yet delicious sauce made from crushed tomatoes, topped with shredded low moisture mozzarella and classic pepperoni.
For baking, @the_dr.sous preheated his Modern Cuisine Baking Steel to 550°F for an hour. He then switched to the broiler, cooking the pizza in just 2-3 minutes, achieving that perfect crispy crust and bubbly cheese. Nicely done, @DrSous!
Our second feature this week is @bakerpizzeria with a stunning pepperoni pizza that’s all about quality ingredients and expert preparation. This beauty was crafted with a 3-day dough using King Arthur organic bread flour, topped with Grande East Coast blend cheese, a few shreds of fresh mozzarella, and flavorful Hormel cup pepperoni. The sauce? Crushed Bianco DiNapoli tomatoes for that rich, authentic taste. Still one of my favorite tomatoes available to us pizza heads.
