How to Stop Burning the Bottom of Your Bread (With the Bracelet On My Wrist)

How They Work
The fix is almost embarrassingly simple. For the final stretch of your bake, after the loaf has set its shape and you've pulled your steam cover off, you lift the loaf and slide the bracelets underneath it. The bands raise the bread just enough to break direct contact with the screaming-hot steel and let heat circulate underneath instead of slamming straight into the bottom crust.

That's an 800-gram loaf in the photo above, sitting up on three bands. And that number matters, because how many bands you use depends on the weight of your loaf.
- Big, heavy loaf (like that 800g boule) — use three bands for stable support.
- Lighter loaf or a ciabatta slipper — a single band does the trick.
Read the loaf. Heavier bread wants more support so it doesn't tip; a light, low slipper needs almost nothing. You'll dial it in after a bake or two.
The Temperature Math (Why 500°F Matters)
Most breads bake in the 400–450°F range. Our bracelets are rated to 500°F. That gap is the whole point, it gives you a comfortable safety margin right where bread actually bakes. You're never pushing the bands to their limit during a normal loaf, which is exactly how it should be.
For pizza, where your steel is ripping at 500°F+, that's a different game, the bracelets are a bread tool, used in the back half of a bread bake, not something you're sliding under a pizza. Keep them in their lane and they'll last you a long time.
No Bracelets? Use What You've Got
I'm going to tell you something most companies wouldn't: you don't strictly need our bands to solve this. The principle is what matters, get the loaf elevated off the steel so it's not in direct contact. Anything heat-safe that lifts the bread will help:
- A pair of metal tongs laid down as a rest
- A bent metal coat hanger shaped into a ring
- A rolled ring of aluminum foil
Just be sure whatever you use can handle the heat, no plastic, nothing that'll melt or scorch. The point is the air gap, not the brand on the band.
That said, the reason I made the bracelets is that the kitchen-hack versions are fiddly. A coat hanger tips. Tongs roll. Foil flattens. When a loaf sits in direct contact with a very hot surface — like a baking steel or stone — for the entire bake, the bottom can over-brown and scorch before the top is done.
