Mix all the ingredients in a bowl, except for the cheese. Gently combine everything together, without over mixing.
Using an ice-cream scoop to measure each patty, take the portioned mix and, holding it in your palm flatten it slightly and put a cube of cheese in the middle. Enclose the cheese with the beef mix and squeeze it gently into your hands to shape it into a slightly flat ball, making sure it is sealed up nicely.
Cook each patty for around 3-4 minutes each side. If you are using the steel on your grill, close the hood while cooking, to ensure the cheese inside melts. If you are using the steel over a fire, you can cover the patties on the griddle with a stainless steel bowl between flipping them.
