Ingredients

72 hour dough
⅓ lb chicken sausage
2 oz. shredded fontina cheese
1 oz. shredded low moisture mozzarella
1 oz. blue cheese crumbles
¼ cup bbq sauce

Directions

Preheat your oven to 450 F with your Baking Steel on the top rack.
Stretch or roll out your pizza dough to about 12 inches, place on your lightly dusted pizza peel
Spoon on a very thin layer of bbq sauce from edge to edge..
Distribute all of the cheese on top.
Add the raw chicken sausage. (I lightly marinated the chicken in the bbq sauce).
You are ready to launch, switch your oven to broiler. When the coils are RED hot it’s time to launch.
Keep it under the broiler for 1 minute. After a minute, open oven and rotate. Switch oven back to convection bake at 450. Bake for 4-5 more minutes.
Remove and add blue cheese crumbles, slice and serve.
