Instructions for Grissini
1. Preheat your oven
Position a rack in the middle of your oven and place your Baking Steel on top. Preheat the oven to 400°F (200°C) and let it heat for 45–60 minutes to ensure it’s fully charged with heat.

2. Stretch the dough
Lightly dust a sheet of parchment paper with a mix of semolina and bread flour. Place your prepared dough on top.
Using both hands, gently stretch the dough side to side until it’s about 10 inches wide. Then stretch the top and bottom to make it roughly 8 inches tall, forming a rectangular shape.
Dust the top of the dough with a bit more of both flours.
3. Cut and shape
Using a bench scraper or sharp knife, slice the dough lengthwise into ¼-inch thick strips — about the width of a pencil and 10 inches long.
Gently stretch each strip just a bit and arrange them on the parchment so they aren’t touching — this prevents them from baking together.
4. Add toppings (optional)
Lightly brush the dough strips with olive oil. Sprinkle with sesame seeds, rosemary, or flake salt if desired. Press gently so the toppings stick.
5. Bake
Place the parchment onto a pizza peel, and use it to launch the dough strips directly onto your preheated Baking Steel.
Bake for 15 minutes, then check. Bake for 5 more minutes, or until browned and crisp to your liking.
For an extra crackly finish, turn off the oven, crack the door, and let them sit for another 5–10 minutes.
6. Remove and cool
Use your peel to remove the parchment from the oven. Transfer the grissini to a wire rack and let them cool completely before serving. They’ll crisp up even more as they cool.
